So when servants are usually summoned, they are given a sort of data dump into their brains - knowledge of the era, how their parameters work, etc. Servants that are summoned are not the actual living figures - oftentimes, they are copies - and copies whose powers are greatly boosted from what they were in life.

    I know Nasu has an explanation somewhere - but the wiki can be as confusing as the material itself sometimes.

    Her summoning ritual is largely symbolic - she isn't summoning herself to change into anything - it's more an acceptance of her power and what her power represents. She doesn't have future knowledge - as she is more closer to Shirou with EMYIA's arm or Mash in that regard.

    Her future self's saint graph was mapped onto her - and it's hinted at in the the Prologue Two. A large amount of her difficulty with her senses and body comes from the fact that she actively rejects her power and what they represent - in that she knows, from the data dump, what it takes to become a servant; let alone a Servant of her future self's caliber. She doesn't have the memories - because then it just be a time travel piece - but what she does have are the imprints of her future self - something that will come up later - in flashes and half-remembered dreams.

    The 'summoning' chant is symbolic of her not rejecting that part of herself any more - coming to terms with the fact that the power is hers to do with as she sees fit - and accepting that who she is now is different from who her future self is: and that it's her power to carry, not just a burden to bear
