Well, I suppose that's two changes. Ganondorf doesn't destroy Link's innocent village and the Gerudo are on board with his plan. Probably a better AU for a lot of people? Keeping chefs alive to make you great food means you have to keep the rest of the supply chain alive to provide ingredients for that food.

The witches, at least, were on board with his plan in OoT. I don't know anything about the other games.
And yeah, Ganondorf may be greedy, selfish, and spiteful, but that describes most kings anyway, so is Hyrule really any worse off? I interpret his razing the capital in OoT as a shortsighted childish tantrum he would later come to regret. He wants Hyrule's stuff, not to turn it into a smoking crater!
