Vessels are not empty automatons. The Knight--Ghost--was the one Vessel to leave and return.
...Turns out there's a difference between knowing something factually and having evidence stuck directly in one's face.
(Or, the survivors of Hallownest get various glimpses into the lives Ghost lived in their time travelling the wastelands.)
