This is something that I've been wondering too, because if there is no way to exclude it, it will cause problems for ficathons like Yuletide (and presumably also any possible artathons of similar nature that might be held on AO3) by screwing up the numbers.
Before fanart hosting is introduced, we'll be completely redoing our 'post new' form to allow for different media, and adding special tags for different media types. We're still figuring out exactly how it will work, but there'll definitely be a way to filter for just art, or just filks, or whatever.
